Vegan Caesar Salad
This Vegan Caesar Salad is a delicious and healthy alternative to the classic salad. The salad is made with fresh romaine lettuce, vegan Caesar dressing, croutons, and vegan parmesan cheese.
For the salad:
- 1 head romaine lettuce, washed and torn into bite-sized pieces
- 1 cup vegan croutons (store-bought or homemade)
- 1/4 cup vegan Parmesan cheese (store-bought or homemade)
- Optional toppings: vegan bacon bits, halved cherry tomatoes, sliced avocado
For the dressing:
- 1/2 cup vegan mayonnaise
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1 tablespoon capers, drained and chopped
- 1 teaspoon CÓCOES Organic Coconut Flower Vinegar
- 1 tablespoon CÓCOES Organic Coconut Flower Aminos
- Black pepper, to taste
- Wash and tear the romaine lettuce into bite-sized pieces. Nestle them in a large salad bowl.
- (Optional) For homemade croutons, cube vegan bread and toast them in a skillet with a little oil until golden and crispy. If using store-bought croutons, have them ready at hand.
- In a small bowl, whisk together the vegan mayonnaise, lemon juice, Dijon mustard, minced garlic, capers, CÓCOES Vinegar, CÓCOES Aminos, and black pepper.
- Drizzle the Caesar dressing over the romaine lettuce in the bowl. Gently toss.
- Generously sprinkle the toasted croutons over the dressed romaine.
- If desired, amp up the flavors with optional toppings like vegan bacon bits, halved cherry tomatoes, or avocado slices.
- Sprinkle the vegan Parmesan cheese on top, then serve.
