Roasted Sweet Potato

Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons CÓCOES Organic Coconut Flower Syrup

Optional Toppings:

  • Chopped fresh herbs (e.g., parsley, cilantro, thyme)
  • Crumbled feta cheese
  • Chopped nuts (e.g., walnuts, pecans, almonds)
  • Plain Greek yogurt (for a savory-sweet combo)

Method

  1. Heat your oven to 400°F (200°C). Wash and peel the sweet potatoes, then cut them into wedges of roughly equal size.
  2. In a large bowl, toss the sweet potato wedges with olive oil, salt, and black pepper until evenly coated.
  3. Arrange the wedges in a single layer on a baking sheet. Roast them in the preheated oven for 20-25 minutes, or until tender and lightly browned.
  4. Remove the baking sheet from the oven and drizzle the sweet potatoes with CÓCOES Syrup. Gently toss to coat them evenly in the sticky sweetness.
  5. Return the baking sheet to the oven and bake for an additional 5-10 minutes, or until the CÓCOES Syrup has caramelized and the wedges are beautifully glazed.
  6. Take the sweet potatoes out of the oven and let them cool for a few minutes before serving.
  7. Transfer the wedges to a serving dish and sprinkle with your chosen toppings.
