Mango Salsa

- 2 ripe mangoes, diced
- ½ red onion, finely chopped
- 1 Roma tomato, seeded and diced (optional)
- 1 jalapeño pepper, seeded and finely chopped (adjust amount for desired heat)
- Juice of 1 lime
- 2 tablespoons CÓCOES Organic Coconut Flower Syrup
- 2 tablespoons fresh cilantro, chopped
- Salt and pepper, to taste
- In a large bowl, combine the diced mangoes, chopped red onion, and, if using, diced tomato.
- In a separate small bowl, whisk together the lime juice and CÓCOES Syrup until well combined.
- Pour the citrusy mixture over the mango mixture and, using a gentle touch, toss everything together until evenly coated.
- Sprinkle in the chopped cilantro.
- Season the salsa with salt and pepper to your taste.
